#Uni-Pak Mackerel Recipe For Lent

Today’s recipe is perfect for my friends who are looking for a meatless recipe in time for Lent. Uni-Pak Mackerel Empanada is perfect for healthy eaters because it uses fish and vegetables as main components and was cooked thru baking, so it’s less calories and less fat compare with deep-frying. As we all know, eating deep-fried foods may increase our risk to certain types of cancer and heart diseases because of too much oil.

Mackerel Empanada is definitely not your usual empanada. But If you love chicken and pork empanadas, mackerel empanada likewise, won’t disappoint. Similar to the texture of chicken, mackerel has a smooth texture, with soft and delicate mouthfeel. It doesn’t have strong odor and taste, hence, Uni-pak Mackerel is perfect for all dishes especially for pasta, salad, and stuffed bread like empanada.

Health-wise, Uni-pak Mackerel can keep doctors away! It is packed with omega-3 fatty acids and high amount of proteins. Eating mackerel benefits your body because it can help prevent heart attacks. Mackerel is low in saturated fats thus it lowers your odds of getting heart complications such as stroke and atherosclerosis.

This empanada recipe is very simple and so easy to do. I split the method into two parts: First is for making the empanada crust and second is for preparing the empanada filling. However, what I found challenging though was recreating the popular empanada edges. There are different ways to do it but obviously, I championed the easiest technique. 🙂 But it doesn’t matter! It’s homemade by the way, and homemade recipes do not have to look exquisite all the time but are guaranteed delicious because they are made at home and by a loving heart.

  • Crust
  • 2 cups of APF
  • 1 stick of salted butter
  • 1 tbsp. of brown/white sugar
  • 1 egg
  • 1/4 of cold water
  • Filling
  • 2 cans of 425g of Uni-Pak Mackerel in Natural Oil
  • Garlic
  • Onions
  • Salt and Pepper
  • 1 Tbsp. of Vegetable Oil
  • Carrots
  • Green Peas
  • Dried Raisins
  • Potatoes
  • 1 Tsp. Lemon/Calamansi Zest


  1. Filling
  2. Saute garlic and onions.
  3. Add mackerel, seasoned with salt and pepper
  4. Once it is partly cooked, add all vegetables and dried raisins
  5. Add a cup of water and simmer until potatoes are tender
  6. Let it cool
  7. Crust
  8. In a standing mixer, add all dry ingredients together
  9. Add egg when dough starts to clump
  10. Turn mixer to high until dough starts to form a ball
  11. Knead the dough
  12. Split in two big dough balls
  13. Create 2 cane-like doughs and cut into four balls
  14. Roll-out the dough and flatten it with a rolling pin.
  15. Refrigerate
  16. Assembling
  17. Place 1/8 cup of filling on top of the dough
  18. Firmly press the edge using a fork to encase the filling
  19. Preheat oven to 175C for 15 mins
  20. Bake until golden brown
