Cinnamon Swirls

Now the baking saga continues…

So here’s the first recipe that I tried with my new oven and the very first bread that I baked! This bread recipe is very simple and suits first-timers in bread baking. I would like to share some important points though at the end of this post. 

Cinnamon Swirls Recipe

Ingredients:

1 tablespoon or 1 packet yeast

1 cup milk

3 cups all purpose flour

3 tablespoons white sugar

5 tablespoons melted butter

Filling

1 tablespoon cinnamon

1/2 cup brown sugar

1/4 raisins (optional)

1/2 cup melted butter

Frosting

50g cream cheese

1 tablespoon powdered sugar

5 tablespoons milk

Procedure:

– Warm the milk in a pan or use a microwave

– Add the yeast and sugar to the warm milk. Leave for about 10 minutes until foamy

– Transfer dough into a lightly floured surface

– Knead for 10 minutes, If using a mixer, use the dough hook and knead for 7 minutes at speed 3 or low speed

– Form the dough into a ball

– Transfer dough back to your work surface. Using a rolling pin, roll out the dough into a thin rectangular shape

– Brush with melted butter

– Add cinnamon, raisins (if using) and brown sugar

– Start with the end facing you, roll the dough into a log shape

– Cut the dough into 2 inch thick pieces. Place rolls into a deep square baking pan. Brush with the remaining butter

– Let it rise for another 10-15 mins.

– Pre-heat oven to 200C or 300F

– When oven is hot, bake the rolls for 20-25 mins or until slightly brown

– For the frosting, just whisk together cream cheese, sugar and milk

– When the rolls are baked, remove from oven, let it cool for 5 minutes and spread frosting on top of rolls.

Now, these are some key points (for first-timers) to remember in baking cinnamon (or other bread recipes).

* In activating yeast, make sure that milk is warm and not boiling. You will use sugar, milk, yeast, and salt to do this. When bubbles appear, add 1 egg and melted butter.

* Dough-tip: the size of your dough may or may not be the same depending on the weather. Dough rises quickly and double the size during hot weather and the opposite during rainy/cold days.

* Dough still grows in size during baking time. So make sure that you use a bigger pan!
